Turn Overripe Bananas Into Dinner for Two!

I recently found myself with 4 overripe bananas, and the determination to make use of them before they went bad. The result? A delicious and healthy vegan meal. My brilliant idea was really just my twist on traditional Jamaican banana fritters. I simply added milder spices, and salt to balance the sweetness - and voil√† - a Caribbean inspired meal for two.

There's actually quite a lot you can do with old bananas; everything from banana bread and gluten free pancakes, to smoothies and ice cream - all of which I plan on trying one of these days. However, this particular night I had what I had, and it was way to late to go to the grocery store, so I made do.  

Ingredients

-4 overripe bananas

-1 egg

-1/2 cup of flour

-Salt and pepper 

-Smoked paprika

-Ground cinnamon

-Lawry's Seasoned Salt

Directions

-Peel and mash bananas

-Beat egg, flour, salt, and spices

-Then blend egg mixture with mashed bananas

-Add flour into the banana/egg mixture, and continue to blend

-Add oil (I used avocado oil) to a frying pan and place on medium-high heat

-Once the oil is hot, pour the banana batter into frying pan (batter using 4 bananas should make about 6 fritters).

-Flip when you see the edges turn golden brown.

I paired my fritters with garlic spinach, spicy black beans, and vegetable fried rice (the frozen kind from Trader Joe's is to die for).
